Keep your fingers crossed that someone will splurge on handmade goat cheese, and don’t forget some local wine, beer or juice. Ingredients And Procedures

8 ounces cream cheese -- softened

8 eggs

pinch salt 1/4 cup heavy cream

1 packet sweetener

Filling: 2 tablespoons butter

1/3 cup peaches (stewed) -- chopped

Combine all ingredients except butter and peaches in a bowl. Beat until smooth. Follow Basic Omelet recipe. When omelet is ready to turn toward center, spoon peaches onto center for filling. Serve
